Peach Bellini Without Alcohol

At last, a classic cocktail whose exact origin is known! The Bellini was created by Giuseppe Cipriani in 1948 at Harry's Bar in Venice, a place frequented by Ernest Hemingway, Orson Welles and Truman Capote, among others. Inspired by Venetian painter Giovanni Bellini and white peaches, which are abundant in summer, Cipriani invented the city's signature drink.

Ingredients

  • ½ oz (15 ml) peach syrup Monsieur Cocktail
  • 3 oz (90 ml) cold non-alcoholic sparkling wine
  • 1 oz (30 ml) cold apple must
  • Peach (for decoration)

Preparation

  1. Pour the cold sparkling wine into a flute.
  2. Using the back of the spoon, carefully pour in the peach syrup to avoid creating too much foam.
  3. Decorate with peach slices.
